If its in a poor condition, start with SO stones. The SO stones are have the lower grit (150, 220, 320, 400, 600) stones, which will give you an excellent edge. If you would like a smoother finish on the blade I would switch over to our HA line of stones and use the fine kit which contains 320, 400, 600, 800, 1000, 1200 grit stones and is an aluminum oxide stone specially
