2022 Thomas Batardiere 'Ultraviolette' Sparkling Rose, Vin de France Mas de Daumas Gassac Aged in barrel (20% new)Certified Biodynamic. 100% Grolleau from a small 0. 36 ha parcel rooted in argilo clay soils with streaks of quartz. The fruit sees a short 24 hour maceration on the skins before fermenting in tank, then bottled to rest on the lees for 3 years. Unfiltered, no sulfur added. A pure, lifted expression of Grolleau bright, bone dry, and a little wild. Wine arrives 05 01 2026.
